Well Fed Shrimp Scampi

shrimp scampiSeems we have been into shrimp lately, although I still haven’t located pre-cleaned and deveined wild-caught shrimp.  The time consuming cleaning task adds on some prep time, but the results are so worth it. With no more shrimp in the freezer, it’s time to find some!

This Shrimp Scampi from the Well Fed 2 cookbook is quick and delicious.  If you have the book, turn to page 114 and experience simplicity at it’s finest.  Feel free to experiment with Mel’s “You Know How You Could Do That” recipe alternatives and experience a total of 6 different international flavors.  The original was so good with the right amount of buttery ghee flavor, great garlicky taste and just enough red pepper flakes to wake up your taste buds.

Don’t have the book?  (Which begs the question, What the Heck are you Waiting For??)  Here is a similar recipe served over spaghetti squash and another for marinated and grilled scampi.  Both look equally yummy!
