Sun Dried Tomato Chicken Bake

IMG_2069I have made this dish from Everyday Paleo a bunch of times, and tonight it was the best ever.  While I love garlic, I left it out tonight as it hasn’t been agreeing with me so much lately.  I think it was so much better without the garlic.  Or maybe it was the sun dried tomatoes (I used Trader Joe’s brand tonight).  Whatever the reason this is my new favorite way!

This literally takes a couple of minutes to prep and just half an hour in the oven.  Just enough time to fix a salad or some veggies to go along.

  • 1 package boneless, skinless chicken breasts
  • 1 heaping tablespoon dried basil
  • 8.5 oz jar julienne sun dried tomatoes in olive oil
  • salt and pepper

Preheat oven to 375.  Cut the chicken breasts into 2 inch chunks and place in single layer in a baking dish.  Sprinkle with dried basil, salt and pepper.  Pour the tomatoes and olive oil in the jar over top and mix well with your hands.  Spread back out evenly.  Cover with aluminum foil and bake for 20 minutes.  Remove the foil and bake another 10 minutes until chicken is nicely browned.

Easy and delicious!  My favorite combination.
