Salisbury Steak

QEPCF-final-cover-242x300I always have grass fed ground beef in the freezer.  Lucky me we still have some of our very own Dexter beef.  If you have freezer space, it’s more economical (and handy) to buy grass fed ground beef in quantity.  It can keep up to a year in the freezer.

You can find some Paleo Salisbury steak recipes online here and here, but our favorite is from Quick & Easy Paleo Comfort Foods (don’t know how I missed putting this one on my cookbook list blog…).  The authors, Julie and Charles Mayfield, have a blog as well if you want to check it out.

Salisbury steak appears periodically on the weekly menu plan (if I’ve done one) but more often it’s what I think of when I have nothing planned but have time to thaw a pound of ground beef.  I usually thaw meat in cold water in the sink or overnight in the refrigerator (when I am planning ahead).  I always have these few ingredients on hand.  Some of us aren’t mushroom fans so we just leave those out.  Also be sure to let the onions saute for a while (longer than the recipe calls for) so that they become nice and caramelized.  Really makes a difference.steak

Tonight we served it with mashed cauliflower.  I have a couple different recipes for cauli mash, but I usually just steam a head of cauliflower florets then put them into the food processor along with some ghee and garlic.  Even better there’s Garlic Ghee from Pure Indian Foods.

Total comfort food!  I know I should be including a colorful veggie on this dinner plate… but it just didn’t happen tonight.
