Peppermint Bark

IMG_1430My son and I have made peppermint bark the last few years and it’s become a holiday tradition.  It’s so easy and delicious, much better than store bought peppermint bark and without additives or chemicals. Package some in a holiday tin as a gift for friends and family or as a hostess gift.

We use TrueJoy organic candy canes (found them at Whole Foods) to avoid the corn syrup and chemicals in regular candy canes.  The organic candy canes aren’t as pepperminty as the regular ones so we add Young Living Essential Oils peppermint oil to get a great minty flavor.  The combination of dark and white chocolate and the peppermint is so good, but if you aren’t a fan of dark chocolate simply double the amount of white.  Ghirardelli chocolate bars work best, but chips work too.  Using high quality chocolate makes the best tasting bark.

  • 3 – 4 oz 60% cacao dark chocolate bars broken into small pieces or 1 bag of chips
  • 3 – 4 oz white chocolate bars broken into small pieces or 1 bag of chips
  • 1 teaspoon coconut oil, divided
  • 12 drops peppermint oil or 1/2 teaspoon peppermint extract
  • 10 (1 box) organic candy canes, crushed

Line a 13×9 baking pan with parchment paper.  Crush the candy canes in a zip lock bag with a meat hammer or rolling pin.  Melt the dark chocolate and 1/2 teaspoon of coconut oil in the microwave on 50% power for 30 second intervals, stirring and repeating until melted.  Spread the chocolate evenly in the baking pan and put in the freezer for 15 minutes.  Melt the white chocolate the same way.  Add the peppermint oil and about 2/3 of the candy canes and mix.  Let it cool a couple of minutes then spread the white chocolate evenly over the dark chocolate (do it quickly so the chocolates don’t combine).  Sprinkle the remaining candy canes over top, pressing in gently.  Freeze for 15 minutes.  Remove from the pan and break into pieces.  Best stored in the refrigerator.

IMG_1413We found that a lot of the crushed candy cane would fall off so the last time we made it we mixed all of the candy cane into the chocolate.  It’s prettier if you leave some for the top but either way it tastes great!
