Paleo Pumpkin Muffins

pumpkin muffinsDespite my recent declaration that I don’t make paleo treats very often, here I am again this weekend making something slightly decadent for my family.  My excuse this time?  The kids are home from college on Fall Break. Nothing says fall like pumpkin and these muffins don’t disappoint.

I did a little internet surfing for “paleo pumpkin muffins” and found a great recipe from the glutenfreehomemaker that met 3 key criteria:

a) I had all the ingredients on hand (except for the pumpkin pie spice but that was easily solved with a second internet search for “pumpkin pie spice”)

b) The recipe had a 5 star recipe rating, and

c) She recommended using my favorite Honeyville almond flour.

It may seem a bit odd that I would just happen to have a can of organic pumpkin puree in the pantry, but it was one I’d purchased last fall and never used. The joy of canned goods is they are usually good for a year or more!

Paleo Pumpkin Muffins

  1. Preheat oven to 350° and grease 10 muffin cups or use large paper baking cups.
  2. In a medium mixing bowl, whisk together the almond flour, coconut flour, baking soda, salt, and pumpkin pie spice.
  3. In a large mixing bowl, whisk together the eggs, pumpkin, coconut oil, vanilla, and honey.
  4. Add the dry ingredients into the wet and mix well.  Mix in the pecans.
  5. Spoon into 10 muffin cups (this large scoop comes in handy for this) and sprinkle a little additional pumpkin pie spice on top.
  6. Bake for 20 – 25 minutes until a toothpick comes out clean.
  7. Transfer to a wire rack to cool.  Taste best when cooled completely.
 Pumpkin Pie Spice
  • 4 teaspoons ground cinnamon
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg

Combine all ingredients, store in an airtight glass container (makes about 2 1/2 tablespoons). Empty spice jars make great storage for homemade spice blends.

These are scrumptious slathered with softened grass fed butter!
