Paleo Chicken Gumbo

IMG_1544I browsed through my cookbook shelf and grabbed Paleo Cooking from Elana’s Pantry for a dinner idea.  Her Chicken Gumbo sounded perfect.  Here’s my adaptation:

  • 1 lb boneless, skinless chicken breast, cut into 1/2 inch cubes
  • 1 package Andouille sausage (I like Trader Joe’s Smoked Andouille Chicken Sausage)
  • 2 tablespoons coconut oil
  • 1 medium onion, finely chopped
  • 6 stalks celery, finely chopped
  • 4 medium carrots, thinly sliced
  • 1 teaspoon salt
  • 1/2 cup minced fresh flat-leaf parsley
  • 2 tablespoons arrowroot powder
  • 1 cup chicken stock
  1. Heat the coconut oil in a dutch oven over medium heat.  Saute the onion for about 10 minutes until soft and translucent.
  2. Add the celery, carrots and salt.  Cook for 10-15 minutes until vegetables are tender.
  3. Add the chicken and sausage and cook, stirring occasionally, until the chicken is cooked through.
  4. Stir in the parsley.
  5. In a measuring cup, dissolve the arrowroot powder into the stock, stirring until thoroughly combined.  Raise the heat a bit and add the arrowroot mixture.
  6. Cook, stirring constantly, for about 5 minutes until the sauce thickens.
