NomNomPaleo Vietnamese Lettuce Cups

photo 3-21For lunch over the weekend, my daughter and I made Vietnamese Lettuce Cups from the NomNomPaleo Food for Humans cookbook.  We also made the Quick-Pickled Carrot Strings which added a nice tartness and was super easy.

The butter lettuce leaves fell apart quickly – mostly due to overloading – but worked adequately to carry most of the food to my mouth.  A fork was necessary to scoop up the rest.  The ground pork, fish sauce, lime juice, fresh herbs and apple all combined for a really yummy dish.  Only a small amount was left over which I am planning to have for breakfast under an over easy egg (my usual solution for leftover meats).
