photo 1Meatballs are quick, easy meals anytime.  Melissa Joulwan has 15 different combinations of meat (ground beef, pork, lamb, chicken or turkey), herbs and spices in her “Burgers, Balls and Bangers” section of Well Fed 2.  Each recipe can be made into any of three basic shapes then baked in the oven, browned on the grill or cooked on the stove.  As always, she helpfully offers suggestions for variations and go-along side dishes.  Mel shared a bunch of meatball recipes online in this March Meatball Madness post.

photo 1With ground meat in the freezer, one of the Well Fed 2 variations is always an option.  I prefer the convenience of meatballs baked in the oven and love this handy scoop to make meatballs of uniform size so they cook evenly.  Our favorites are Italian and Classic Pork.  Serve over spaghetti squash, zucchini noodles or just on their own with veggies or salad on the side.  I make an easy Italian sauce to go on top:

Super Easy Italian Sauce

  • 15 oz can organic tomato sauce (I prefer Muir Glen)
  • 1 tablespoon Italian Herb Mix (I like Penzeys)

Combine in a small saucepan and cook on low until hot.  Spoon over meatballs.
