Hearts of Palm Salad

hearts of palm saladMy sister in law made a huge bowl of this salad recently for a family gathering and it was so good I got the recipe.  A perfect summer salad with avocado, lime juice and cilantro providing guacamole style flavor and it’s still good the next day if it lasts that long.

She used a Weight Watcher’s recipe as a guide.  I used these amounts to make 4 servings, but adjust to suit your tastes.  It can be easily doubled, tripled or quadrupled to fit the size of your crowd.

  • juice from 1 lime
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground pepper
  • 3 tablespoons diced scallions
  • 3 tablespoons chopped cilantro
  • 14 oz can hearts of palm, drained and sliced 1/2 inch thick
  • container of cherry tomatoes, quartered
  • 1 avocado, peeled and diced

In a large bowl, combine lime juice, olive oil, salt and pepper, stir in scallions and cilantro.  Add hearts of palm, tomatoes and avocado to bowl; gently toss to coat.  Enjoy!
