Easy Paleo Treat – Chocolate Coconut Peppermint Squares

IMG_0799I found this recipe online a while ago, but unfortunately can’t remember where to give credit!  I’ve modified it slightly and make it whenever we are craving something sweet or want to take a simple dessert somewhere.  Dark chocolate, coconut, peppermint and honey are a very healthy combination to satisfy your sweet tooth!

Chocolate Coconut Peppermint Squares


  • 2 cups shredded unsweetened coconut
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey
  • 1/4 teaspoon sea salt
  • 12 drops Young Living Essential Oils Peppermint
  • 3.5 or 4 oz dark chocolate bar or 1/2 cup of dark chocolate chips

Ingredient notes: 

Unsweetened coconut – I love Tropical Traditions in the gallon pail, but you can buy smaller sizes as well.

Coconut oil – I love Tropical Traditions Gold Label Virgin Coconut Oil.  I get the gallon as it is more economical and keeps for a long time but it’s available in smaller sizes as well.

Honey – it’s important to buy pure honey in order to get the health benefits.  Shop carefully as most store brands are not pure.

Peppermint oil – it’s critical to use only therapeutic grade essential oils for ingestion and I only use Young Living oils because of their purity.

Dark chocolate – the higher the cacao content the better.  Mark Sisson has a post on the 5 Best Dark Chocolate Bars.  I like Green & Black’s Organic Dark 85%.


Line a 5×5 pan with foil (I don’t have one that size so I use a 9×5 pan and use the foil to make a square using half the pan).


Place the shredded coconut, coconut oil, honey and salt in a food processor and blend until well combined.  Use a spatula to spread the coconut mixture evenly into the pan.  Freeze for about 15 minutes.  Melt the chocolate (I usually do this in the microwave on half power for about a minute and a half) and spread over the frozen coconut.  Place back in the freezer for another 15 minutes.


Remove the foil, place on a cutting board and chop into pieces.  I usually wait a couple of minutes for the chocolate to soften a bit so it cuts easily.  Store in the refrigerator.

So easy and so yummy!
