Easy Breakfast Omelet

photo-1The thing I love about breakfast is that pretty much anything works.  Warm up leftover soup or chili, and as I’ve mentioned before I love having over easy eggs on top of just about any left over meat or skillet dish.

There were no leftovers this morning, so breakfast ideas turned to what’s in the fridge.  Enough for a fast, yummy omelet.  You can easily substitute bacon, sausage or any meat you have left over in the fridge for the prosciutto.  Diced salami, deli turkey or ham would work equally well.

Be sure to check labels – I recently found La Quercia Proscuitto Americano in a local grocery store.  You can also order it online.  The ingredients are simply pork and sea salt.  No additional nitrates or nitrites and made from hormone free, humanely raised American pork.  Check out the company website for information on their farmers and their philosophy.  I love supporting these types of businesses!  This proscuitto is also great for my Chicken Piccata!

Here’s what I used today to make an omelet for two:

  • 1 teaspoon of coconut or regular ghee (or try one of the spiced ghee’s from Pure Indian Foods)
  • 3 oz package of prosciutto, roughly chopped
  • 1/4 onion, diced
  • couple handfuls of spinach, roughly chopped
  • 6 eggs, beaten
  • salt and pepper to taste

Melt the ghee in a skilled over medium heat.  Add the prosciutto and onion and cook until onions are soft.  Add the spinach and cook until wilted.  Add the eggs, salt and pepper.  Turn heat down to low and cook until eggs are set.  Flip and cook until eggs are done.  Divide and serve.  Feel free to top with salsa, hot sauce, avocado – whatever suits your fancy.  Who said breakfast has to be complicated??
