Bacon and Chicken Skillet

bacon chickenOne of my favorite dishes is Skillet Squash and Greens.  My husband created a spin off version with bacon, veggies and chicken for an easy and delicious one pan dinner.  After all it’s hard to go wrong when bacon is involved.

I was excited to find Paleo friendly bacon at Whole Foods!  Pederson’s Natural Farms Uncured No Sugar Hickory Smoked Bacon.  You can see exactly how they make it here.  Pretty cool.

  • 1/2 package sugar free bacon, diced
  • 1 orange or red bell pepper, sliced
  • 1 onion, thinly sliced
  • 2 chicken breasts, cut into bite size chunks
  • couple of big handfuls of spinach or kale, chopped  (we were out of both so skipped it this time)

In a large skilled, cook the bacon until crispy.  Add the pepper and onion and cook until softened and onions begin to caramelize.  Add the chicken and cook until crispy and cooked through.  Add the spinach or kale and cook a couple of minutes longer until wilted.

If there were leftovers I would have them under over easy eggs in the morning,  but alas there were none.
