Another Quick Skillet

photo 2-3Keeping grass fed ground beef in the freezer means dinner is only a fast thaw away.  Quick skillet dinners are a go to for me when time is short and planning ahead hasn’t happened.  Here’s another version I recently enjoyed for dinner.  True to form, I heated some in a skillet with coconut ghee the next morning and tossed a couple of over easy eggs on top.  Yum.

  • 1/2 package of bacon, diced (preferably sugar free)
  • 1/2 onion, diced
  • 4 cloves garlic, minced
  • 1 lb ground beef
  • 1/2 summer squash, diced (or zucchini)
  • couple handfuls of spinach (or kale or chard)
  • ripe olives (I love these Trader Joes olives)

Cook the diced bacon until partially cooked.  Add the onions and garlic and cook until the onions are soft and almost carmelized.  Add the ground beef and cooked until almost done.  Add the summer squash, spinach and olives and cook until the squash is soft and spinach is wilted.  Adding some sliced avocado on top if you have one handy is always a good idea.
