A Better Guacamole “Chip”

JicamaRecently we found a fantastic substitute while dining at Zapatista Mexican Restaurant in Chicago.  Jicama sticks!  Jicama is a tuber similar in texture to a turnip but with a taste closer to an apple.  Jicama is an excellent source of fiber, vitamin C and potassium.  It’s crisp, fresh subtle flavor make a perfect guacamole chip!

Look for firm, round tubers and store them in the refrigerator for up to four weeks.  Wash them like a potato, slice off the top and bottom and remove the peel in strips with a paring knife.  Slice into sticks.

For the guacamole, I like Nom Nom Paleo’s simple version although I don’t bother with the shallots and if I have cilantro I chop some up and add it in for an extra flavor boost.  Picking the perfectly ripe avocado can be challenging and I recently found this article online that tells you to check under the stem, but in the comments section I found out this is NOT the way to choose an avocado according to an avocado farmer:

Please don’t pull off the stem buttons. We farmers work hard to make sure they stay intact so the avocado will ripen evenly. When the button is gone the end will ripen faster and rot sooner.  The best way to tell is to gently press. photo 2Here’s a good article with great tips to find a ripe avocado including a color chart which is helpful.  Have a ripe avocado but don’t need to use it yet?  Store it in the refrigerator which will slow the ripening process so it will last another week.  To prepare the avocado, slice it in half lengthwise, remove the pit with a spoon, scoop out sections and mash with a fork.

Simple Guacamole

  • 2 or 3 ripe avocados, mashed
  • juice from 1 lime
  • salt and pepper
  • 1 tablespoon or so of cilantro, chopped (optional)

Combine all ingredients well.  Add chopped tomatoes and onions/shallots if desired.
