5-Minute Blender Porridge

porridgeBreakfast for me is usually eggs either as a scramble or omelet with veggies, or my favorite over easy eggs on top of leftovers like ground beef skillets (last week’s skillet was ground beef, marinated grilled artichokes, sundried tomatoes, summer squash and swiss chard – so yummy).

On occasion though I like to mix it up and take an egg break.  Back in my pre-Paleo days I was a big oatmeal fan, so I love when I find a good Paleo porridge recipe like this one from the Oct/Nov edition of Paleo Magazine.  A big bonus is that it is quick and easy to make, faster than making eggs when I want to get out of the house in a hurry.

Since I start each day with a cup of hot water and lemon (usually a drop of Young Living Lemon oil), I always have hot water in my Cuisinart programmable kettle in the morning.  I was gifted the kettle last Christmas and it is by far my most used kitchen appliance.  I’m a big tea drinker and I love having the temperature options for each type of tea and the fact the water is at the perfect temperature in just a few minutes.

By the time the kettle is hot the ingredients can be in the blender.  The cinnamon was enough flavor for me, but add a bit of honey or maple syrup if you like it sweeter.  I also love getting the added health benefits of cinnamon first thing in the morning!

Here’s how to make it:

  • 1/4 cup unsweetened, shredded coconut
  • 1/4 cup raw walnuts
  • 2 tablespoons flaxseeds
  • 2 tablespoons chia seeds
  • 1 teaspoon cinnamon (Ceylon is best)
  • pinch of sea salt
  • 1 1/2 cups very hot water (I used boiling temp on the Cuisinart kettle)

For serving:  if desired, add milk of choice, maple syrup or honey, fresh fruit or berries

  1. In a blender, combine the coconut, walnuts, flaxseeds and chia seeds.  Blend until all ingredients are pulverized, but not yet smooth.
  2. Add the cinnamon, salt and water.  Blend until smooth.  Pour into a bowl and let sit for about 5 minutes to thicken (I put a kitchen towel over top to keep it warm).  Serve with a splash of your preferred type of milk if desired (I skipped the milk), maple syrup or honey to taste and fresh fruit on top.
